  • Expand Your Palate With San Simeon Pinot Noir

Did you know that there are over 10,000 wine varietals!? With so many options, selecting one to help expand your palate can be an overwhelming task. Luckily, San Antonio Winery can help you out. We have the perfect wine for you; one that is delicate yet distinct and complex: San Simeon Pinot Noir. San Simeon Pinot Noir is a lighter-bodied red wine that wine drinkers will appreciate for its fruity blackberry flavors and soft aromas of aged oak and spice. Pinot Noir has a naturally high acidity, but San Simeon mellows out this acidic taste by bringing out the bright, plump fruit flavors that California wines are famous for. Pinot Noir is low in tannins, meaning that it won’t leave that drying feeling in your mouth like some of the heavier red wine varietals such as Cabernet Sauvignon. It is even light enough to be enjoyed without the company of a full meal.

Pinot Noir’s name derives from its French roots. ‘Pinot’ means “pine” in French, which is named after the pine cone shape the Pinot Noir grape clusters grow in. “Noir” describes the grapes’ rich dark color. It’s no doubt that Pinot Noir has a devoted following. Historically, it is a finicky grape to grow because of its thin skin, making it susceptible to damage due to temperature fluctuations and diseases that can wipe out the whole crop. It was the favored wine varietal amongst Catholic monks who used it in their sacraments, helping Pinot Noir to gain mass public popularity. More recently, Pinot Noir reached fame upon the success of the 2004 film Sideways, in which Paul Giamatti’s character was a devoted Pinot Noir fan.

Finally, what’s food without wine!? San Simeon Pinot Noir pairs beautifully with a wide range of foods due to both its delicate nature and its high acidity. Try San Simeon Pinot Noir with an Italian dish like basil crostini in tomato sauce or even with sushi.

Pick up a bottle of San Simeon Pinot Noir from the San Antonio Winery at any of our three locations: Los Angeles, Ontario, or Paso Robles.

Many of things we like are determined by where they come from, especially when it has to do with food and drinks.  The region influences the end product and when you get the right people behind the process, the outcome can be pretty spectacular.  That’s what you’ll find with San Simeon Wines!

Each bottle is carefully crafted to capture the essence of the California Central Coast.  The powerful flavors found in San Simeon Wines reflect the beauty and freshness of the Pacific coast town of San Simeon.   To give you a taste of a few of the red wines, the Pinot Noir is rich with berry and finishes with smokiness.  The Petite Sirah is jammy and has notes of vanilla spice.  San Simeon Merlot brings out mint and dark chocolate.

All San Simeon Wines have been aged in French and American oak barrels and of course, we have white wines in this collection as well.  The Viognier and Chardonnay are filled with tropical fruits with complements of citrus and pear.

  • Jam Just Got Fancy

Fruity jams taste great but fruit jams with wine are so much better!  It might even make your grandmother jealous. The Cabernet  Strawberry and Blueberry Sauce recipe made with our Cabernet Wine from San Simeon Wines modernizes the traditional jam and will excite your taste bud.  So let’s get sippin’ and mixin’.

    One 8-ounce bag fresh strawberries

6-ounces frozen blueberries (about 1 1/2 cups), unthawed

    1 cup Cabernet Wine

    1 cup granulated sugar

1 tablespoon cinnamon, or to taste

1 teaspoon ground cloves, or to taste

Combine all ingredients in a large pot and bring to a rolling boil, stirring intermittently. Make sure your pot has room for the sauce to at least triple in volume. The juices from the berries release and as the mixture boils rapidly, it will foam.

Reduce heat to low and allow sauce to simmer for about 20 to 30 minutes or until reduced and thickened slightly, and most of the strawberries have burst.

The sauce will thicken more as it cools. Transfer to heat-safe jars or glass containers with lids. Allow sauce to cool at room temperature before refrigerating. Sauce will keep airtight in the refrigerator for at least 2 weeks.

We always need a little after work pleasure.  Dipping into this wine jam is a very pleasant moment. A synonym for this moment is Cabernet Wine.  Let your imagination run wild pairing this wine  jam with desserts or salty meals, while sipping on a glass of Cabernet.

  • Pair Your San Simeon Coastal Wine With Food From The Coastal Seas

Seafood can be a bit intimidating to try out in the kitchen but it is oh so tasty with wine. With the abundance of food possibilities out there, there is something for everyone and we have a simple scallop idea that pairs perfectly with a glass of San Simeon Chardonnay that you can enjoy at home. It’s so good you might decide not to share and enjoy this one on your own!

Our San Simeon Chardonnay is created in cool climates and captures tropical citrus fruit flavors. This tastes great with scallops and we’re going to top them over avocado and tortilla chips for easy but exquisite finger food.

You’ll want to serve the scallops last, so let’s go through the first couple steps prior to getting to the scallops.

Mash up a couple of avocados, squeeze in lime juice, and add salt. Scoop these on top of tortilla chips. On top of that, place some micro greens and chopped cilantro.

For the scallops, pat them dry then season with salt, pepper, and any other seasonings you enjoy. We like cumin and paprika, and if you want some kick, add a pinch of cayenne pepper.

Add oil to a nonstick pan and make sure it gets nice and hot. When you place the scallops they should sizzle. You also want to give them space – don’t overcrowd the pan. Scallops don’t take long to cook – just two minutes on each side so they are seared to a golden brown and the sides are no longer transparent.

Transfer atop the tostadas you created and pour yourself a chilled glass of San Simeon Chardonnay for all the hard work you did 😉

    Buon appetito!
